Rated

Ingredients

48 oz catfish fillet about 8 ounces each
12 oz evaporated milk
1-1/4 cups all-purpose flour
2/3 cup grated Parmesan cheese
1/2 tsp baking powder
1 tsp onion powder
1/4 tsp garlic powder
1 tbsp ground paprika
½ teaspoon italian seasoning
1/2 tsp salt
1 tsp pepper
½ cup butter
1/2 cup margarine
1 cup Almonds, sliced, toasted

Preparation

Place the fillets in a shallow glass baking pan large enough to lay the fillets flat. Pour the milk over the fillets and marinate overnight in the refrigerator.

Preheat oven to 400° F. In a medium-sized bowl, mix together the next nine ingredients and dredge the fillets in this mixture.

In a small saucepan, melt together the butter and margarine. Place the marinated fillets on a greased, rimmed baking sheet and drizzle the butter mixture over the fillets. Bake for 20 minutes. Do not turn.

Place the fillets on warmed serving plates and top with the almonds. Serve immediately.
