In blender, mix tofu, eggs, sweetener, lemon juice, soy milk, vegetable oil, salt, cinnamon, nutmeg, vanilla, and lemon rind until smooth.
Pour mixture into bowl. Add rice, coconut, and raisins or dates, and mix well.
Bake in an oiled dish at 350°F for about 50 minutes. Serve hot or cold.
