Charlie's Carrot Cake

Ingredients

2 cups all-purpose flour
2 cups sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
3 cups finely shredded carrots
1 cup oil
4 whole eggs
8 oz cream cheese, softened
4 oz Butter, unsalted, softened
5 cups powdered sugar

Preparation

Preheat oven 350°

In a bowl combine flour, sugar, baking powder, baking soda, and cinnamon. Add carrot, oil, and eggs. Beat with an electric mixer till combined.

Pour into 2 greased and floured 9 x 1-1/2-inch round baking pans. Bake in a 350° oven for 30 to 35 minutes or till a toothpick inserted near the centers comes out clean.

Cool on wire racks for 10 minutes. Remove cakes from pans. Cool thoroughly on racks.

Beat the softened cream cheese and butter until smooth and no lumps appear. Add the powdered sugar 1/2 cup at a time until you've reached your desired consistency. Add more if needed. Frost cake as desired.
