Chicken Ro-Tel Casserole

Ingredients

1 lb chicken, cooked and deboned
7 oz vermicelli pasta
1/2 cup water
2 cups chopped onion
2 whole green pepper, seeded and chopped
1/4 cup butter, melted
10 oz canned tomatoes with chilies
8 oz canned mushrooms, drained
16 oz canned whole corn kernel, drained
2 tbsp Worcestershire sauce
1 lb processed pasteurized cheese

Preparation

In a stock pot, cook chicken until tender. Debone, chop, and set aside.

Cook vermicelli per package directions. Cook until tender and drain well.

Sauté onion and green bell peppers in melted butter. Remove from heat.

Add tomatoes, mushrooms, corn, Worcestershire sauce, and cheese to the onion mixture. Stir gently until the cheese melts.

Mix sauce with vermicelli and chopped chicken.

Pour mixture into a 9" x 13" x 2 1/2" pan.

Bake at 350 degrees F. for approximately 30 minutes.
