Brown Rice Pilaf

Ingredients

2 tsp safflower oil
1 whole small onion, chopped
1 stalk celery, chopped
1/2 c. brown rice
1/3 c. bulgur wheat
2 cups beef stock

Preparation

In a large skillet, sauté onion, celery, brown rice, and bulgur in oil.

Add beef broth and bring to a boil.

Cover and simmer for 30 minutes, or until the rice and bulgur are tender and the broth is absorbed.
