Lime-Broiled Fish

Ingredients

1 teaspoon dijon mustard
1/4 cup fresh lime juice
2 teaspoon fresh ginger root, grated
1/8 tsp cayenne pepper
1 tsp apple juice concentrate
1 dash pepper
1 lb bone-in fish fillets, cut into 4 equal pieces

Preparation

Combine all ingredients except fish in a shallow bowl.

Add fish to lime mixture; marinate at least 1 hour, turning occasionally.

Preheat broiler. Place fish on a broiler rack. Broil 5 minutes, basting with marinade. Turn fish carefully. Broil 5 to 7 minutes more, until fish turns from translucent to opaque.
